Grapes for Chablis Village wines are machine-harvested which ensures quick picking. This technique allows for slight pre-fermentation maceration which enables aromatic substances found in the skin of the grapes to be extracted into the juice. The grapes are transported to the winery rapidly to avoid any risk of oxidation.
